What I Eat for Breakfast

To me, breakfast is the most important meal of the day. What you eat for breakfast will give you energy for all your daily activities, and keep you going throughout the entire day. So many teenagers and even adults are seen telling their friends that they only managed to eat a granola bar for breakfast or even worse, skipped breakfast altogether. Those decisions are totally unhealthy. Breakfast is the meal that provides you with energy to keep you productive throughout the day, and without it, you will find yourself feeling tired and sluggish midway to the end of the day.

It is important to have a breakfast high in protein and fiber, as that will keep you full for a couple of hours, at least until lunch time. Having a healthy breakfast instead of sugary cereals or just a cup of coffee is better for your overall health as well. So, I wanted to share my daily breakfast meal with you guys, and potentially inspire you to try out what I eat for breakfast!

My typical breakfast meal:

1. Fried egg with spring greens and cheese on a piece of toast - I find this meal super filling, plus it is high in protein because of the egg! To make this, I crack an egg into a small bowl, whisk the yolk and egg white together, then pour it on a heated pan. While I fry the egg, I pop a piece of whole wheat bread into the toaster and toast it. After the egg is cooked and the bread toasted, I place the toast onto a plate, put a good amount of spring greens on top, sprinkle some shredded mozzarella or parmesan cheese on top of that, then put the fried egg on top! Super simple, quick to make, and tastes delicious!

2. Glass of water - I always try to start my day with a glass of water. This keeps me hydrated as it is really easy to get dehydrated during the night, and it is super refreshing, so it definitely wakes me up.

3. Fruit - I like to accompany my meal with a piece of fruit. I usually just grab whatever I see in the fridge, so lately it has been strawberries, blueberries, plums, grapes, or a peach. Sometimes if I don't have time to make the fried egg with greens and cheese on toast, I cut up some fruit, mix it with greek yogurt, sprinkle granola and honey on there, and eat that!

Getting Through Finals Week

Spicy Veggie Bean Chili

Since moving from my old house with a tiny, cramped kitchen to my new house with a large, open kitchen with an island, I have been meal prepping, cooking, and baking a lot more.
