Creamy Chickpea Curry

Lately I have been really invested in trying new recipes, and this one is another one that I had to share. I have been following Nikole Goncalves for a while on YouTube and Instagram, and I absolutely LOVE her. She has the most positive attitude, posts amazing recipes on her blog, posts videos on YouTube while managing her company, and she even recently released her own cookbook (which I have been dying to purchase)!

This recipe that she posted is something I have only made once, but will definitely make again and again. My boyfriend who follows a different food regimen than me even really liked this curry as well. This recipe is definitely a keeper, and is healthy yet still delicious. It also is super quick to whip up, making it a super easy dish to make when you want something loaded with flavor but are limited on time. This is Nikole's Creamy Chickpea Curry.

Ingredients:

  • Olive oil (1 tbsp) - I always eyeball this
  • Diced red onion (1/2 cup) - I believe I used a whole red onion
  • Minced garlic (1 clove)
  • Grated ginger (1 inch)
  • Curry powder (1 tbsp)
  • Ground coriander (1 tsp)
  • Ground cumin (1/4 tsp)
  • Paprika (1/4 tsp)
  • Chili powder (1/4 tsp) - optional
  • Drained and rinsed chickpeas (1 can - 19 oz)
  • Diced tomatoes (1 1/2 cups)
  • Canned full fat coconut milk (1 cup)
  • Sprinkle of salt and pepper
  • Fresh baby spinach (2 handfuls)
  • Cilantro (as garnish) - optional 
  • Quinoa, rice, grains to have on the side - optional
**(With the curry powder, ground coriander, ground cumin, paprika, and chili powder, I like to mix it all together in a little bowl beforehand, so that I can pour it into the skillet all at once, thus saving time)


Instructions:

  1. Heat your olive oil in a large skillet over medium-high heat. Saute your onions for 1 minute, then add the garlic and ginger and sauce for another minute.
  2. Add in your curry powder, coriander, cumin, paprika, and chili (if using). Stir and saute. 
  3. Add in your chickpeas, diced tomatoes, and coconut milk. Bring this mixture up to a boil and cook this for 5 minutes, stirring often.
  4. After these 5 minutes of cooking, I like to taste the curry and add salt and pepper as I see fit.
  5. Toss in your handfuls of spinach. Stir and cook the curry for another minute or so. 
  6. It is ready!

Spicy Veggie Bean Chili
