A healthy recipe that is both quick and easy to make. Great food item to bake when craving a tasty but not too sugary treat! Tastes like chocolate with a hint of pumpkin.

- 1 egg
- 2/3 cup white sugar
- 1/4 cup vegetable oil
- 1/2 cup applesauce
- 2 tsp vanilla extract
- 2 cups flour
- 1 (1 oz) package sugar-free instant vanilla pudding mix
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 1 (6 oz) package semisweet chocolate chips
Procedure:
- Preheat oven to 350 degrees Fahrenheit.
- In a muffin tray place the muffin paper liners in the tray.
- In a medium bowl, mix the pumpkin puree, egg, sugar, vegetable oil, applesauce, and vanilla extract together.
- In a large bowl mix the flour, pudding mix, baking powder, cinnamon, salt, and baking soda together. Add about half of the chocolate chips int the mixture and stir.
- Pour the pumpkin mixture into the four mixture and stir until combined. Make sure to stir with a SPOON and NOT an electric mixer.
- Spoon the batter into the muffin paper liners in the muffin tray and top with the other half of the chocolate chips.
- Bake the muffins in the oven for about 20 minutes, or until the knife comes out clean when inserted into the center.
- Take the muffins out of the oven once cooked and cool them in the pan for 10 minutes. Then remove and place them onto a wire rack.
- After cooling, enjoy your pumpkin chocolate chip muffins!
