Baking Cookies Without Eggs!

This blog post is going to be all about a special type of cookie: cookies made without eggs! There are thousands, no probably millions of cookie recipes out there that require the use of eggs when baking those cookies. However, this cookie recipe is special, in that there are no eggs required to create this treat.

These cookies are super easy and quick to make, they smell delicious when being baked in the oven, and they taste absolutely divine once they are done baking!!!! They are perfect to have alone, or dipped in milk, and are the perfect combination of sweet and savory.

So, here is the recipe for how to make Kids Bake 'Em Cookies!

Ingredients:
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • 1/2 cup salted butter, softened
  • 1/4 cup white sugar
  • 1/2 cup honey
  • 1 cup (6 oz) of semisweet chocolate chips (you can put more or less of the chocolate chips in your batter; ultimately it is up to you)

Procedure:
  1. Preheat your oven to 300 degrees Fahrenheit
  2. In a small bowl, combine your dry ingredients. This includes your flour, baking soda, and salt.
  3. Mix your dry ingredients well with a wire whisk and set aside.
  4. In another medium bowl blend your wet ingredients. This includes your softened butter, sugar, and honey.
  5. Blend these ingredients together with an electric mixer at medium speed. When blending these ingredients together, you can use a kitchenaid, a hand held electric mixer, or use a wooden spoon.
  6. Mix your wet ingredients together until the mixture is light and fluffy. Then scrape the sides of the bowl.
  7. Add the flour mixture (mixed dry ingredients) into your wet ingredient mixture. DO NOT add the flour mixture all in at once though. Add the flour mixture in by thirds or halves so you can ensure that all of the flour mixture is mixed into the wet mixture.
  8. Once the flour mixture is all mixed into the wet mixture, add in your chocolate chips and blend/mix at a low speed until just combined. Do not overmix.
  9. Place your dough in rounded teaspoonfuls onto ungreased cookie sheets, 1 1/2 inches apart.
  10. Bake your cookies for 18-20 minutes or until they are a light, golden brown color.
  11. Once the cookies are out of the oven, transfer them with a spatula to a cooking rack.
  12. After they have cooled for a few minutes, pick one of the cookies and try it!

Getting Through Finals Week

As winter break is approaching and finals week is coming up, many students are stressed about how to study in order to perform successfully on their tests. Here are some tips on how to be calm, well rested, and ready for finals week. 1. Use Quizlet  - I started using Quizlet my junior year of high school, and I have used it ever since. I am now a freshman in college and I still use Quizlet for my classes. Quizlet is amazing; if you have a lot of terms you need to memorize, Quizlet is the perfect online website that will help you study those terms. Once you write in the terms and their definitions, there are a variety of options you can choose in order to study the terms, including a test, flashcards, etc. 2. Get lots of rest - Don't stay out late when you know you have a final the next day. Getting a lot of rest is beneficial if you want to perform well on a test. It does sound lame to go to sleep really early, but if you do so, your body will thank you. By going to sleep early...

Spicy Veggie Bean Chili

Since moving from my old house with a tiny, cramped kitchen to my new house with a large, open kitchen with an island, I have been meal prepping, cooking, and baking a lot more. With this, I have been keen to try new recipes! I do eat meat, but most of the time I tend to cook vegetarian and vegan meals. This vegetarian chili recipe was one that I came across while browsing for a good, hearty chili recipe, and it is so delicious I had to share it with all of you. I did not come up with this recipe myself. The lovely Shannon, with her blog "The Glowing Fridge," posted this recipe. Her website is amazing, and I highly recommend you check it out. (Also, if you are interested in more plant based recipes, take a look at Shannon's website here: https://www.theglowingfridge.com ) Ingredients: 1/3 cup vegetable broth (or 1 tbsp olive oil) - for sautéing 1 onion, diced 1/4 of a finely diced jalapeño (optional) 3 minced cloves of garlic 1 bell pepper of any color, diced 1 ...
